We are always looking to ‘evolve’ especially within the Evolution branded wines. Here’s where Evolution in Progress comes in. This program is intended to give our winemaking team the chance to play with a wider variety of wines and share them with Evolution fans. All wines in this program are fully crafted to the winemaking team’s liking and are only made in small batches.
This wine is known to the winemaking team as ‘Dylan’s Delight’. It was a project taken on by our Cellar Master, Dylan, to join the structure and body of Gamay with the flavors and silkiness of Pinot Noir. The resulting union is a wine that will carry any summer BBQ no matter what you feel like grilling!

Find yourself immersed in a woodland berry patch with a nose full of blueberry and boysenberry, as well as wild mushroom and sage. On the palate, the berries take over, with a slight peat moss finish.
